Cabbage Salad
By: David Warda - 2 pounds Green Cabbage, shredded
- 1 Green Bell Pepper, thinly sliced
- ½ large Sweet Onion, thinly sliced
- ½ cup Sugar
- Dressing:
- ¼ cup Sugar
- 1 cup White Vinegar
- ½ cup Vegetable Oil
- 2 teaspoons Salt
- 1 teaspoons Dry Mustard
Toss the cabbage, pepper and onion with the sugar until the vegetables are shiny. Transfer mixture to a colander set inside a large bowl, cover and refrigerate for several hours or overnight. For the dressing, bring the ingredients to a boil in a saucepan. Pour the hot dressing over the drained cabbage mixture. Toss to blend. Chill the salad for at least an hour before serving. Keeps crisp for several days. Serves 12. |
