Description: Great collection of family recipes, including several Spanish recipes that are unique and very good. There are some regional recipes for homemade ketchup, freezer corn, homemade ice cream and other items that are not in the usual cookbook collection.

Funds raised support: Funds are being raised by Cara (a 6th grade student) to support a People to People ambassadorship to Canada. This opportunity required recommendations and a personal interview prior to being selected.

Cost: $10
plus $3 S/H per book.

• 5-6 large chicken breasts
• 1 tsp pepper
• 2 cups fresh salsa (I use Sam's Club prepared)
• 2 cups cooked white rice
• 3-4 chicken bouillon cubes
• 1 bunch cilantro, chopped
• 3 ripe avocados, seeded and chopped

In large stock pot filled to half with water, boil chicken breasts on medium heat until cooked through; let cool. Shred chicken and put back in water. Add rice, salsa, bouillon cubes and cilantro. Boil before serving; serve over avocado.
