Peach Ambrosia Pie (Award-winning)

- 4 cups peaches, plums, and a touch of berries
- 2 cups sugar
- 1 tsp. squeezed lemon juice and zest
- Pinch of salt
- 1/4 cup tapioca
- 1 Tablespoon cornstarch
- 2 (9-inch) pastry shells
Mix peaches, plums, berries and sugar. Add lemon juice and lemon zest, salt, tapioca and cornstarch. Put in pastry shell, top with second crust. Bake at 450-degrees for 10 minutes, then turn oven to 350-degrees and bake another35 to 40 minutes. |
