Favorite Recipe

Red, White and Blueberry bars
By: In honor of all Service Members

  • 2 c. flour
  • 1 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 1/2 c. shortening
  • 4 egg whites
  • 1/2 tsp. almond extract
  • 1/2 c. fresh or frozen blueberries
  • FROSTING:
  • 3 c. powdered sugar
  • 1/2 c. margarine or butter
  • 3-5 Tbsp. cherry liquid or milk
  • 1/2 c. chopped marashino cherries

Heat over to 350 grease 15 X 10 X 1 jelly roll pan. Lightly spoon flour into measuring cup and level off. In large bowl, blend flour, sugar, baking powder, salt, milk and shortening at low speed until moistened. Add egg whites and almond extract: beat 2 minutes at medium speed. Folk in blueberries. Pour into greased pan and bake 23-33 minutes or until toothpick inserted in middle comes out clean. Cool completely. For frosting: In a medium bowl, combine powdered sugar, margarine, and enough cherry liquid until frosting is desired spreading consistency: beat until smooth. Fold in cherries and spread over cooled bars. Makes 45 bars.
