• 5 lbs idaho potatoes boiled with skins on
• 4 eggs
• 1 c butter
• 2 sprigsitalian parsley minced
• 1 c parmigian cheese
• 1 c fresh mozzerella diced
• 1/2 c prosciutto minced

peel potatoes and place in a ricer or blender in a lge bowl place butter rice hot potyatoes on top add cheeses, parsley, prosciutto, and eggs one at a time mix well add salt and pepper place mixture in a non stick bundt or baking pan coated with butter and bread crumbs bake at 375 degreees for 35-40 minutes until top is golden brown
