Spicy Mulligatawny Soup
By: Suzanne L. Hagen 3 T. oil 1 lb. cubed chicken, cooked 2 c. Granny Smith apple, diced 1 1/2 c. onion, copped 1 c. celery 1 c. green pepper, chopped 1/4 c. flour 2 T. curry powder 2 1/2 tsp. ground ginger 1 tsp. crushed red pepper 2 (46-oz.) cans chicken broth 1 c. mango, diced 1/2 (6-oz.) can tomato paste 1/2 c. fresh parsley, chopped 1 tsp. salt Sauté onion, carrots, celery and green pepper for 5 minutes. Add curry powder, ginger, red pepper and salt. Sauté for 5 minutes longer. Add flour; stir thoroughly into vegetables. Slowly add broth. After a few minutes, add chicken, apples and the mango. Simmer for 30 minutes. Add tomato paste to thicken. Add parsley after cooking has finished. |
