Favorite Recipe
Baked Puppy Drum
By: Joe Simons, Chesapeake, Va. - 4 to 5 lbs. puppy drum
- 5 to 6 med. potatoes, peeled, cut up
- 1 to 2 med. onions, quartered
- 2 c. water
- Salt and pepper
- 1/2 c. flour
- 4 to 5 bacon strips
Place fish in a roaster like you would use to bake a chicken. Place potatoes around and on top of fish. Separate the quartered onions and place on top of potatoes and fish. Add water, and salt and pepper to your taste. Sprinkle flour over potatoes, onion and fish. Place bacon strips individually on top, cover and bake at 350 degrees until fish flakes and potatoes are done. Serves 4 Note: Adjust amount of onion to your preference. This recipe originated with my mother. Works very well with striped bass also. (this recipe is on page 57 of our cookbook) |
